You bring up an interesting point. There are 2 creation stories told in the bible.
The first: Gen.1:1-2:1 (Moses 2:1-3:1)
The second: Gen 2:4-22 (Moses 3:4-22)
The order is very different. One is a spiritual creation and one is a physical creation. The spiritual creation is the first and takes 6 days with a sabbath on the seventh. The physical creation takes 1 day with no sabbath.

For I, the Lord God, created all things, of which I have spoken, spiritually, before they were naturally upon the face of the earth. For I, the Lord God, had not caused it to rain upon the face of the earth. And I, the Lord God, had created all the children of men; and not yet a man to till the ground; for in heaven created I them; and there was not yet flesh upon the earth, neither in the water, neither in the air;" - Moses 3:4-5
So God rested from his spiritual creation which took 6 days.
